Hosted at Exeter Cookery School, the full-on one-day course with Peter Greig of Pipers Farm takes you on a fascinating journey.

What you'll learn...
You'll find out how the farm's animals are reared, what makes the meat so tasty and tender, and why it's so much better for your health and pocket than mass-produced supermarket fodder.

You'll learn about the various cuts of meat, butchery techniques and preparation prior to cooking, such as trimming, tying and rolling. Cooking methods such as searing, braising, poaching, roasting and stir-frying will be covered.

You'll learn about how to enhance the flavour by the varied use of seasoning, charring and marinading.

What you'll butcher
Here are a few of the meats you could be butchering and cooking or even just sampling…

Lamb: break down a whole lamb carcass into a range of popular cuts such as shoulder (for a slow braised soft shoulder of lamb dish) and rack.

Chicken: Portion a free range chicken into breast, wing, thigh, drumstick and carcass – what you learn here holds for any bird.

Duck: remove the breasts and legs; make stock from the carcass; slowly confit the legs so they end up soft and delicious; pan-fry the breast until pink, juicy and tender.

These are examples of the kind of dishes you could be making:

~ Slow-Braised Shoulder of Lamb – we'll get this on early to have before you go home.

~ Rack of Lamb – chine, French-trim, score and roast a freshly butchered rack

~ Pan-Fried Breast of Chicken or Duck - which you will likely enjoy for your lunch.

~ Confit – salted duck leg slow-poached in duck fat

~ Meat Stock

Road Directions

Exeter Cookery School is located on the Haven Banks side of Exeter Quay, at 60a Haven Road. It is easily accessible and there is ample parking in nearby car parks.

Public Transport Directions

The closest train station to Exeter Cookery School is at Exeter St Thomas, a 5-10 minute walk away. Alternatively, visitors arriving into Exeter St David's can either take a connecting train to Exeter St Thomas, take a 5 minute taxi ride or walk if they are feeling particularly energetic - this should take between 15 and 20 minutes depending on your pace.Turn into Haven Road from the A377 Alphington Road, opposite the Riverside Leisure Centre, then take the first left to stay on Haven Road. Follow the road around until you see Exeter Cookery School on the left, next to AS Watersports. The main entrance is on the canalside, accessed via a passageway between Exeter Cookery School and AS Watersports.The nearest car parks are located just off Michael Browning Way, which can be accessed further along Haven Road. Once parked, leave via the pedestrian exit, which will bring you back out onto Haven Road opposite the passageway to the main entrance to Exeter Cookery School.You can also access Exeter Cookery School via bus – with bus routes linking with the city centre and Alphington, as well as Park and Ride.
